The Softest, Moist Brilliant Banana Muffins

Until the day I tried one of these banana muffins I have not known nor understood what it is to be a muffin. Squishy, soft and succulent, these muffins are perfect for any occasion if you don’t eat them all the first day. 

Banana Muffins



  • 1 1/2 cup flour 
  • 1 tsp baking soda
  • 1 tsp baking powder (aluminum free) 
  • 1/2 sea salt 
  • 3-4 ripe bananas 
  • 4 tbs of melted vegan margarine (butter) 
  • 1 egg
  • 1/2 cup brown sugar 

For the crumble: 

  • 2 tbs of flour 
  • 2 tbs of butter 
  • 1/2 tsp cinnamon 
  • 4 tbs brown sugar 

Preheat oven to 350. 

Grease the muffin pan with margarine, oil or butter. 

Combine the first 4 dry ingredients in a small bowl with a whisk. 

In a large bowl combine the sugar and melted margarine. Add egg and whisk till fluffy. In a medium bowl mash the bananas. Add the bananas to the wet mixture and stir till combined. 

Add the dry ingredients to the wet ingredients 1/4 of a cup at time, stirring after each addition. Stir until mixture is moist. 

Pour the batter into the muffin tin and make sure they are even in the amount. 

For the crumble, heat up the 2 tbs of butter in the microwave or in a saucepan. combine the flour, cinnamon and sugar together and then add the melted margarine. Combine until resembles liquid. If not liquid, add more margarine. 

Dribble the crumble liquid over each muffin, about 3 tsp per muffin, but just have fun with it! 

Then cook for about 10 minutes. Do not overcook, or they will not be moist and delicious! Watch them carefully, they are well worth it! :) 

This recipe makes 15 medium muffins.
